picked up some bacon from marin sun farms today along with some flanken short ribs i'm planning on marinating for kalbi. just cooked up a couple of slices of the bacon to try it out, and i don't really know what to say about it. it was good, in the sense that the pork tasted good, and i know the pig was probably a pretty happy oinker in life. but the cure was kind of weak. you know, it was fine. i think a case of top notch meat that wasn't really allowed to shine. and my tiny studio kitchen did not fill up with the smell of bacon, and the smell of bacon is one of its principal virtues! i threw a couple slices into a pot of beans i'd cooked the night before, and that, plus a tad bit more simmering, made the beans round out in flavor, but not in any noticeable way.
come to think of it, i suppose there is a place for mild bacon. anyways it's portioned up and in the freezer, but i should've just grabbed the fatted calf bacon. oh, this bacon was thinly sliced. any other thoughts on marin sun's bacon?
