Mardi Gras, Get Ready

A friend and I here in DC will be pitching a Mardi Gras dinner and I'm having trouble deciding on what to serve. I'm thinking Crawfish Monica, Jambalaya and a "mess 'o catfish" (fried 'natch) with remoulade.

Now I know that Mardi Gras is not a time to think about your fat intake, but something light to balance the meal would be nice.

So if anyone's got any helpful suggestions (and I know you do) on the recipes I've mentioned, and something light I'd love to hear them.
