Just wanted to say a belated thanks to the Hounds who've mentioned this recipe. I've been making it at least once a month, and again just last night. I love the Zuni Chicken too, but it's incredible how simple but fantastic this recipe is. I'm one of those people who love to cook those long, complicated recipes, so this is such a winner because I don't need to do one thing to improve it. Juicy, flavorful chicken with crispy skin. And I've had the book and never tried it...thanks again Hounds.
