Two months ago, I checked out the pop-up at a commercial kitchen in Petaluma. The find of the night was Mama Mel's Bread. These gluten-free breads are the best I've tried with beautiful crumb and texture from cool 12 to 24-hour fermentation.
This is REAL bread and from talking to the owner, I think it will only get better as she further refines her technique. I tried the baguette shown and a bagel. She apologized that the crust was a bit rubbery because the weather had been damp. I told her that this was only the second gluten-free bread that I've actually wanted to eat, the other being from a bakery in Reims, France. She sells by pre-order with drop-off in Marin and Sonoma counties.
