My husband wanted me to bake him white chocolate chip cookies last night. We moved over the summer and I don't bake as much as I'd like to. I had thrown out quality cocoa powder that I hadn't touched in 3 years at our old place. But I hadn't restocked, either. So in scanning my shelves for a substitute, I remembered that I once substituted nestle's quick for the cocoa+sugar in a chocolate cake recipe and it came out great! And then my vision landed on the ovaltine. It was chocolate ovaltine and although it's weak in the cocoa department, I thought the malt with the white chocolate had potential. It was sooooo good. I had no macadamias, and my husband didn't want walnuts. The tanginess of the malt complemented the smooth, creamy sweetness of the white "chocolate".
I love scavenged recipes- open cabinets or frig, mind tabulating the results of combining what I've got. Anyone care to share their fun substitutions/improvisations/accidents?
