Making yellow cake mix with club soda??

Question

i another post someone mentioned making cake from a mix by simply adding just club soda and nothing else. does it work?

 i've been trying to find a decent yellow/vanilla cake recipe that does not use egg/nuts and finding to be virtually impossible. my son who has an egg allergy wants a vanilla cake and a decent one too. i used cherrybrook vanilla cake and we thought it was pretty meh. i'm usually not into using cake mixes but if it'll work then i'm game.

What are you trying to accomplish with the club soda that you can't do with water? If you mean will using club soda negate the need for eggs, the answer is no but I agree with cheesecake in that perhaps you can seek out Ener G egg replacer or as I've said in another post, try using silken tofu instead of eggs @ 3 tablespoons for each large egg subbed.

The author of the Hungry Girl blog was on The View last week. Among the reduced calorie items she brought to the studio was such a cake. She said to use any cake mix with any diet soda of your choice, in the same volume as the liquids the label calls for.

A link to an older thread with a little more in depth discussion about which types of sodas to use and the turn out. I have still not tried this trick, but I would think you would have a shorter shelf-life on the cake once it's baked, since the eggs and oil help retain moistness during storage.

This doesn't answer your question, but when my son had a milk/egg allergy (since outgrown), we found that using Cherrybrook (or whatever the brand was, I can't remember--ordered from Mrs Robens) and adding extra vanilla greatly improved the flavor. Most of the time, though, I just made tha tso-called "wacky" cake, which has no eggs or milk. If you leave out the cocoa powder, it can be vanilla flavored.

YES YOU CAN DO THIS!!!! You can get any boxed cake mix that does not require milk and replace ALL liquid ingredients with 12 oz of club soda! I make chocolate, yellow, and any other kind of cake i want this way. it comes out even better than using the oil and eggs!!! it also keeps longer because it is dairy free!

I just made cake pops using 12 oz of club soda with the box of cake mix, came out good and saved me 120 calories and went from having 21% fat to 2% fat (1.5g)

Final thing I want to get straight: I pretty much think Dr. Oz is a stange, off the wall, weirdo (can I say that? Oh yeah I can, it’s my blog). But every now and then the dude spews something that isn’t worthless from his mouth – and in this case it was club soda…err…and cake…Anyway this kind of cake is nothing new, but the recipe was recently on his show. I tried it – and it was great.
 
So I was looking something up and came across this hopefully it helps . I understand it's hard trying to find good things for kids when they have allergys or in my case my son has juvenile diabetes so any suggests always help:) well good luck:)

Club Soda in a cake - whooda thunk it?
Basically what you do is replace the eggs and oil in a regular cake mix with a can of club soda. Mix it to the consistency of a “normal” cake batter – and bake that sucka for 30 minutes. I recommend using a toothpick to test it incrementally – no two ovens I’ve came in contact with in this life have ever had remotely the same cooking times.
 
Then get it out and eat up. It saves about 100 calories per slice, and 1200 calories per cake. Now that’s worthwhile.

Soooo many great substitutes for eggs in baking cakes. I've had great successes with vinegar/baking soda, applesauce, and smashed banana. Use your favorite homemade cake recipe and just sub one of these for the egg! Ill link a chart that shows the ratio of substitute per egg.
