Making vegetable fajitas in Cuisinart Griddler?

Trying to make vegetable fajitas in my cuisinart griddler...what's the best method..should I marinate the vegetables (mushrooms, red and green pepper, scallion) and then put them on grill and grill them? And do I use the griddle flat side or the raised grill side? Also, when I heat my tortillas (from Trader Joe's refrigerated ones), I usually just spritz them with some cold water, and put them in a non stick pan on high for a few seconds on each side, and they come out perfect...but I've read elsewhere that it's best to put them in towel and microwave them???

What about just heating them up on the flat side of the griddler, it's nonstick, wouldn't that work just as well, and would accomodate the larger flour tortillas, fairly well.

I usually just make beans on the stove, so grilling veggies this way on my griddler would be a new thing, however, I'm a bit afraid of my mushroom giving off too much liquid, and my veggies steaming on the griddler and not grilling...so, this is why I am wondering, flat side or grill raised side, and marinate the veggies beforehand?? Also, think I should have everything sliced fairly thin, including mushrooms...
