Making Springerle and it's hot and humid

I didn't think to check the weather before mixing up Springerle dough last night. It's warm and humid, and it looks like it will be humid all week. I'm worried the cookies are just going to spread out on the pan and not dry, not to mention the dough is going to be super sticky to roll out. Any tips for rolling out and drying in humid weather? I'm using molds, not a roller, if that makes a difference. Or should I just chunk the dough and wait for better weather?
