Making a delicious broth

Hi CH! Given the recent popularity of 'bone broth,' it's no wonder that my searches amounted to nothing.

I want to make a broth this weekend that I can eat all week. I looked into making a ramen broth, but it's far more complicated than I want. Something that takes 2 days is fine. Something that takes 3 days and trip a to chinatown...not happening.

I'd love ideas for a flavorful broth to which I could add things throughout the week--like thinly sliced mushrooms or peppers, shredded greens, meat (perhaps a byproduct of the broth?), slivered scallions...etc, etc, ideas welcome.

Anyone have recipes or tips for adding wonderful flavor to a broth? I make a killer, simple chicken soup. I'm looking for something with more going on.

Edited to add: I can't have soy--my bfing son is allergic :-(
