Making Corned Beef and Pastrami

Here in San Francisco, we're always complaining about the lack of decent Jewish deli food in our area. I was thinking that I might try and make some myself from scratch.

I've seen plenty of recipes for Corned Beef that tend to be of "Corned Beef and Cabbage Variety," (e.g., Cooks Illustrated, Julia Child) but I've only come across a few in Jewish cookbooks that would make the classic NY Deli type Corned Beef. Any good recipes, tips, or suggestions would be appreciated!
