I am making this Peruvian drink which calls for
lemon and pineapple
The recipe i have says to boil skins of all fruits with the water and corn for like 45 mins.
I am getting a bitter taste that tastes a little "pithy"
I am wondering if iam getting that from the pineapple rind? or orange, lemon?
Should i just zest citrus and add the juice after its boiled to avoid boiling the skins?
