Making cakes with a handmixer

Has anyone used a handmixer to make a cake? I was watching the foodnetwork and saw the chefs using a handmixer, but wouldn't that result in a tough cake? I find that even when using the standmixer can sometimes result in a tough cake and the paddle seems to whips more gentle than beaters! If anyone has had sucess with using the handmixer, what is a good recipe because the stand mixer is so heavy and hard to carry out all the time.
