making bread last without freezing it

I love fresh bread but I usually buy for one, and it takes me a week to get through a loaf. By the time I get to the last third...it's stale, mouldy or soggy (depending on how I've stored it).

I've tried plastic bags, which seem to make the bread go soggy; also have tried putting it in the fridge -which seems to make the bread lose it's flavour. I don't like slicing it and freezing it because then I'm forced to eat toast - and I like it raw.

What would tin foil or paper do (though I have no idea how I'd go about wrapping it in paper)

Any bright ideas?
