I went to maki today for lunch based on its 26 in zagats... i had katsu don, which was good, but with it i had a tekka maki roll... which was horrible. i ate only 1 piece of it and pushed it away. now, before i swear it off, i have a question about tekka maki rolls. the tuna tasted more like chu-toro (which i dont like that much) and was very soft and buttery like toro or chu-toro as well. i always thought that tekka rolls were made with maguro... is this the case and the tuna they gave me was just bad, or are they sometimes made with other "higher quality" tuna cuts and i just dont like chu-toro?
