I often come across recipes that call for a 12-inch non-stick skillet with a lid. I have a Calphalon commercial non-stick omelette pan that doesn't come with a lid, and doesn't seem to fit the generic lids that you can buy at restaurant supply shops.
What to do in such circumstances? Can I just cover the top with aluminum foil - or would that not adequately seal in the heat? Any suggestions would be greatly appreciated. Thanks very much!
