Magnolia Bakery Cupcakes, Martha's Cream Cheese Frosting

I love Magnolia's Vanilla Cupcake recipe .. batter is great, cake, too. It calls for both all-purpose flour and self-rising flour. (I checked and my almost full bag of self-rising says it expired in 2012 .. just went to the store to buy fresh!)

Martha's frosting calls for 2 sticks of butter, 12 oz cream cheese, vanilla and 1 Lb (4 cups) confectioners' sugar, sifted.

I'm going to make the cupcakes tonight for a friend's birthday tomorrow; he will come to pick up. (It's his 8 yr old daughter's birthday the following day! Double whammy!) Should I frost them tonight? Do I have to refrigerate? When to put on sprinkles? I also bought German chocolate sprinkles to make that bundt cake everyone raves about, found them at Cost Plus. Can I sprinkle those on too? So, I have rainbow and the chocolate sprinkles.
