The "magic" of cryovac - after breaking down a sub-primal... clock ticking?

Hi. Sometimes my grocer offers large subprimal cuts in cryovac at great prices. I've twice now bought their round subprimal and broken it down into several roasts, a bunch of breakfast steaks, and some other regular steaks. My question relates to the difference in shelf life once you've taken it out of the cryovac packaging and broken it down.

For example, if I buy the subprimal today (25Aug) and it has a use by date of 5 weeks from now (say, 02 October) - once I take it out of the package and break it down into roasts and steaks etc., if I get these all back into the fridge in vacuumed bags, can I expect the most of the original shelf life?

Or is there something "magic" about the original packaging that means once I break it down, I need to consume or freeze it within a couple of weeks?

Not looking for perfect answers here, just wondering how folks view this.

Edit - so far in both cases the question has been academic, as I've been able to use up all the cuts within about two weeks. So I'm mostly wondering for future's sake.
