Planning a 1 week trip to Madrid at the end of November with possible day trips to Segovia, Toledo, Salamanca & Avila depending on how the planning turns out. We'll be based in an AirBnB in Malsana for the week. My husband and I love delving deep into the food culture of each area. I'm vegetarian (no meat or fish but egg & dairy is fine) and he has no restrictions. We haven't been to Spain since 2007 but I know it's a pretty meaty place. Hoping to find places where we can both have extraordinary food experiences.
I am just starting my research and am scouring the boards. So far I have a lunch reservation at Ramon Freixa for our anniversary where they happily agreed to do a vegetarian tasting menu for me. The other meals we'd prefer to be more causal and just authentic, real good food. Would love some local recommendations in Malsana but of course will travel for a great meal. Also in search of one great lunch spot in each town we may visit. I've been checking out Jose Maria in Segovia so hubby can try the Cochinillo (and there are vegetarian items on the menu as well). This seems like a fancier/showier option which maybe seems unnecessary - any other suggestions I'd love to hear.

Lakasa sounded great but they replied to me that they would not cater to a vegetarian :(
As I said just really starting to research but would love to hear about your must visit spots for tapas, delicious food, wine, live music, etc.
I'm also in the market for a good book about this region and the food specialties if anyone has a recommendation.
