Madrid and Segovia in early March

My girlfriend and I will be in Madrid the first week of March and are looking for recommendations for the following:

In general we're looking for moderately priced places, for dinner, and good, but inexpensive for lunch. Spanish, tapas type cuisine only.

Dinner near the Westin Palace for our first night - walkable distance i.e. approx. 15 mins.

Paella - great place for Paella (open on location and price) willing to spend a bit more on this and happy to cab it if needed.

Flamenco - wouldn't necessarily eat there, but would love to see a show or hear some Spanish guitar music and if there's good food all the better.

Segovia - Lunch

Any and all recommendations are welcome. Also, anything we need to be aware of, other than the usual, as we'll traveling on our own.
