Madrid Airport Layover

It looks like I will have a 12-hour layover in the Madrid airport, which seems enough time for a focused chow excursion. I've never been there before, so I am looking for advice. I am constrained by time (roughly 8am - 8pm , I think) and the need to get in / out of the airport, security, etc., which will eat a significant amount of this time. So, what should I plan?
