At yesterday's BBQ contest in Brentwood, one of the food vendors, Madam FloodPuppy's House of Catfish was handing out samples of the fried catfish. A thin sample piece, the flesh was probably a little drier than a full sized portion. What was remarkable about it was the thin, very crisp seasoned cornmeal coating. Deliciously spiced, absolutely greaseless, such pleasing texture. Not too thick and heavy, not rubbery, or loaded down with oil. An assortment of hot sauce was available to add some fire.

Has anyone else tried this vendor? She said she only does festivals. I'll be keeping an eye out for it in the future.
