Recently opened, it's by the back wall in Gansevoort Market (far-right side corner)--with beautifully marbled aged steak.
While the steaks are beautifully marbled, their homemade sausage and chopped beef are quite lean. The spicy sausage is exquisite!
Gansevoort Market is on Gansevoort St., bet. Greenwich and Washington Streets. (This is where Greenwich Street becomes Ninth Avenue in the Meatpacking District).
The recent opening of this Butcher Shop is truly a gift to all carnivores. When you go there, you'll see what I mean.
(Macelleria is a restaurant on the same block, a couple of doors down; due to high restaurant turnover, the meat is very fresh).
