I am catering a pre-wedding "All American" BBQ and have decided that I want to do macaroni and cheese as vegetarian option (in ramekins for individual service.) I have been to epicurious etc. looking for recipes but wanted to see if anyone here had any drop dead recipes. It can be an updated version of the classic (actually, that might be better) and needs to be able to be made w/o meat. Most of the guests will be British (if that makes a bit of difference.)
Also, how would I change the cooking time because of using ramekins?
