I recall eating the best macadamia nut pancakes on Maui many years ago at a place called the Gazebo. Tourist would buy a jar full just to take home. The recipe appearemtly left with the chef that created it. Although very good pancakes are served there today they are not the ones that compel me to write. The pancakes were large and you could order bananas on top. What really put these "over the top" as the best was the special topping (sauce) created for these Macadamia Nut Pancakes. It was a golden / Caramel color, very thick (almost like a cake batter), a rich butter taste, sweet (maybe Caramel) and shaved macadamia nuts were all over the top of the sauce. Anyone know how to even try making such a topping?
