I LOVE Mapo Doufu. It's a dish I never tire of...ever. It's the one dish I could eat morning, noon and night, day after day. That said, though I love to cook and I like nothing better than experimenting in the kitchen and trying to replicate a favourite restaurant dish at home, I have to admit, the very best Mapo Doufu dishes I've eaten have all been at restaurants.
I know there are many others out there that love this dish as well and I'm hoping that someone can provide me with (or point me to) a recipe that will rival those I've had at restaurants.
I know many folks love Fuchsia Dunlop's version but somehow that version doesn't do it for me. I'm looking for a dish that mirrors the simplicity and mouth-numbing perfection of those I've so loved at truly authentic Chinese restaurants in China and beyond.
