One of the tastiest lunches I enjoyed away from camp was the signature, Sappritto! at Ma Der Ma Der Sap House & Grill. Essentially Laotian flavor meets Cal-Mex burrito log. I confess that I was pretty dubious, but tasting is believing. Even though this monster was too much for me to finish at one sitting, I didn't want to stop eating this awesome invention because it was so delicious and I loved the combination of textures.
The Sappritto combines loose, crusty-edged, well-browned bulk Laotian sausage (sai ua), tender strips of tri-tip that tasted like there might be soy sauce and fermented black beans in the marinade, two eggs over easy (or however you want them since they're cooked to order), grilled onions and bell peppers, mushrooms and sticky rice. And they're not stingy with the meats. I loved the chewy resistance to the bite of the perfectly cooked sticky rice and how it trapped the rivulets of runny egg yolk. Add in a choice of sauces starting from a sweet chili sauce, ground grilled jalapeños, honey-sriracha, Thai chili, or habanero. I stuck with the first two and really liked the green herbaceousness and medium-heat of the jalapeño Sap sauce. The flour tortilla was too thick for my taste, but at least it was griddled a bit to crisp up some of the exterior.
The Sappritto makes Sap House a destination worth a detour. I consider Laotian sausage one of the world's greatest charcuterie and taste them whenever I discover a new source. The version here is among the best I've run across, housemade by the owner's fiancée whose family owns Thai Hut restaurant.
Super nice folks in this tiny establishment. They fed evacuees at Crosspoint church in the early days of the wildfires and continue to donate to fundraisers for fire victims. The tasty cuisine makes it easy to support this business. I overheard another customer say that she wanted to order the chicken wings panfried in chili sauce that they'd sent to another site. Karma at work.
