Lunch, good bakeries or ice cream spots between Denver and Albuquerque?

Will be driving Denver - Albuquerque and back over Labor Day weekend -- looking for suggestions for good modestly-priced lunch spots vaguely half-way between convenient to I-25. Something cafe or diner-ish would be fine -- nothing fancy or exclusively Mexican, please.

(I did find an earlier thread on this topic, but thought things might have changed since 2008!)

Edited to add -- any bakery or ice cream recommendations, along I-25 or in Albuquerque, would also be appreciated!
