I think I must be part grizzly bear or something. All I want to eat these days is salmon in the form of lox. It's getting ridiculous, really. Oh, well.
I'm looking for alternatives to my old favorite, the beloved combo of lox, dill, capers, tomato slice, and a squeeze of lemon, offered up on a plain bagel. My (stupid, annoying, un-houndish) constraint is I'm trying to cut back on the good ol' processed white flour stuff.
Rooting around on the web, I've found a recipe using jicama slices in lieu of crackers for canapes. (See link below.) Sounds good to me.
Any other ideas?
I'm not too big on comingling the fish with cream cheese or otherwise diluting the fishy goodness of the lox in blended form, but I'm all for olive oil, or a wee dab of cream cheese.
If it's not already obvious, I'm a novice cook, so be gentle, please.
Long live lox! :^)
(P.S. If you have a favorite brand of sliced lox, or otherwise can school me in the fine art of this lovely fish-format, do tell.)
