Looking for lowkey restaurants in Seattle

I am going up to Bellevue for a long weekend. There's going to be an omakase dinner on one night, so I'm looking for the less expensive and less gut-busting options for lunch on the weekend and dinner on the other night. I'm open to most cuisines, though my boyfriend isn't wild about Mexican. Someplace with really good homemade soup and sandwiches would be just great, or Vietnamese, Thai, Indian or Middle Eastern casual restaurants would be good, too. Also suggestions of places open for lunch on Sundays would be appreciated. We have a rental car for the weekend, so we don't mind driving into Seattle or other cities for good food.
