We had risotto for dinner last evening. There was some leftover chicken in the fridge because there are only 2 of us now (empty nest). We always have some arborio rice in the house and risotto is so versatile. The ingredient list follows. The preparation method is up to you.
cooked chicken (2 breast halves & some thigh meat)
2 (14 oz. cans) of good chicken stock
1/2 cup Madeira wine
a few squirts of Worcestershire sauce (L & P, of course)
1 cup arborio rice
1 medium onion, diced
1 medium green bell pepper, diced
2 cloves garlic, thinly sliced
2 thin organic carrots, finely grated
1 rasher of leftover partially cooked bacon, diced
1 tsp. dried oregano
My wife insists on buying 'organic.' The bacon was left over from my wife's preparation of wrapped sea scallops, so I tossed it in. What else can one do with 1 strip of bacon! No hot stuff went into this dish because my wife cannot tolerate pungent stuff.
