After picking up some pies for my boyfriend's birthday last Friday, I must declare my love for Pizza on Earth in Charlotte. It's a wood oven bakery located on a small farm way off the beaten path, where they make thin-crust pizza, artisan breads and pastries. It's take-out and open on Fridays only, and definitely a bit of a drive from where we live, although they do have seating outside in the summer. But it's worth it! They'll do split pizzas, so last week we got one with their specials, Curried Aubergine and BBQ beef, and another that was 1/2 pepperoni and 1/2 garden vegetable. The eggplant was the crowd favorite, but they were all very good. We also picked up a few packages of their homemade marshmallows and english muffins, and 2 loaves of the walnut bread. I think it's my favorite bread in VT! The wood-fired oven infuses the crust with intense smoky flavor, and it's full of big chunks of walnuts... so delicious.
