Lotus of Siam Update

Am in Las Vegas and have eaten at Lotus four times in the last three days. Haven't repeated any dishes, so have sampled approximately 20 dishes. I'm not sure I can think of any restaurant offhand that can prepare so many Platonic dishes.

I'll post a real report when I have more time, but I wanted to mention that, hearteningly, Jonathan Gold's review in Gourmet has made a huge difference in the business. Bill Chutima reports that the Gourmet review has brought in more customers than previous raves in the NY Times and L.A. Times. And most of the new patrons have been from the East. Whereas Lotus used to be empty at dinner, Bill has had to turn business away on occasion.

I don't see any dimunition in the food whatsoever, but the crowds strain the timing a little.
