Lots of pork belly, what to do?

I recently came into a decent amount of pork belly from a local farm. What are some good ways to showcase it? I'm really not looking to make bacon. I am thinking if roasting it in some Asian fashion. I'd also like to make some ramen. What are some good recipes or uses that really highlight this cut?
