Lots of fresh turmeric - now what?

Wandering the aisles of a favorite local Asian market last week, I vaguely remembered coming across a recipe requiring oodles of fresh turmeric among my many cookbooks, so succumbed to temptation and bought a package of said rhizome.

Of course, when I got home I couldn't remember where I had seen the recipe. In the meanwhile I've used a bit of the fresh stuff in place of turmeric powder in a few dishes, but I've barely made a dent in my supply. Since my memory fails me, can anyone suggest recipes (for food, not dyeing cloth!) that require quantities of fresh turmeric?

One book in my collection gives a rough outline of a recipe for turmeric pickle, which sounds great. If anyone can fill in the details or provide other recipes, I'd appreciate it. Thanks.
