My little patch of oregano is off to a great start this spring. It and the rosemary seem to thrive on neglect which is what I give them.
I love this Pernil-like pork recipe that calls for a full 2 cups of fresh oregano and a large amount of garlic & pepper. (I crack the peppercorns in a mortar & pestle and cook in a slow cooker.) http://relish.com/recipes/garlic-pork...
But I am am looking for other tasty ways to use my bounty of fresh oregano. Spouse follows a ketogenic diet for her diabetes so breads, potatoes, pasta and other carby foods may suit other readers but not me.
