I usually make a roast chicken according to the Zuni cafe recipe, wherein the raw chicken is salted and rests covered in the fridge for 1-3 days. My planning was a little messy this time. I bought the chicken on Saturday, and salted it on Sunday, and plan to cook & serve it tomorrow (Wednesday).
I simply didn't want to return to the store on Sunday (I did a lot of cooking & cleaning the day before), and it was closed on Monday due to a holiday, so my only option was to buy it early or too late.
Will it be safe to serve?
