I am an experience cook, but this has always perplexed me. If a recipe says to marinate in the fridge overnight - usually beef, lamb or chicken, and I plan to cook it the next evening - do I marinate it overnight until it is time to cook it - which would be maybe 16 hours - or should I do it in the morning for maybe 7-8 hours until time to cook it?

Not many people eat marinated food for breakfast - so this is confusing to me. I don't want to over marinate so that the meat, in this case chicken, become mushy.

Usually I marinate from morning until cooking time - but tomorrow that would be inconvenient for me, so I wanted to do start it tonight.
