Long layover at Houston airport

I'm venturing over from the SF Bay Area board and hoping that you can help me in my brief travels through your fine state.

My boyfriend and I have a seven-hour layover in Houston this Saturday. Our plane from SF lands at 6:00 am and we don't fly out again until 1:00 pm. So, I'm thinking that should leave enough time to leave the airport, but we won't be renting a car for this little adventure. I see that there is a Metro system of buses and subways, but I haven't tackled it yet because I don't know where I might want to go. It looks like a taxi would be too expensive -- I can't see adding $80 to the cost of breakfast.

Any advice? At that time, we would be looking for a good breakfast/brunch. Probably nothing too spicy after a night flight with little sleep. Alcohol options are irrelevent to us at any time of day, and I can't eat gluten (wheat, rye, barley, oats), so places with non-bready options are best. This usually isn't a problem with breakfast, but just in case. I know, we sound like loads of fun, don't we?
