So, last week i went down to the coast and bought a quart of shucked gulf oysters. They were shucked on 3/11 (today is 3/19).
Usually when i buy them i go through them in about a week. the day after i bought them, before opening the container I got a bug, and didn't want to look at them.
Today I'm no longer sick, but I probably can't cook them until Saturday. I'm planning on cooking some on Saturday, then freezing the rest. I hate freezing them because i think that they lose something after being frozen, but in this case I don't feel like i have a choice.
BTW, I called the fish market and they said i should use them by this weekend
Anyone have any experience with this?
