How long will different fats last?

bloodboy | Aug 17, 201712:24 AM

I bought a pack of fats from Fatworks back in October of 2015. About a month after that purchase I had no choice but to leave the country. I have just returned last week and have a ton of bottles of different fats in the refrigerator.

I must have bought ten different bottles because of a Halloween sale that was going on. I have Beef tallow, pure lard, leaf lard, duck fat, and buffalo fat, about $200 worth of fats. Most of them have never been even opened. The only fats that were not stored in the fridge were the beef tallow and the buffalo tallow. I have placed in the fridge now though, the other fats were in there the entire time. I also found two containers of fat that I scooped up from making stock that are still in there also.

I opened up a bottle or two of the Fatworks fat and they smell "fine" to me. (I haven't checked the containers that have fat that I rendered yet). I mean I don't really know what it's supposed to smell like though. But I was just wondering if you feel I can still use all the fats or just throw it all away. I really don't want to waste it but I don't want to get sick/die either...
