I'm making a Cuban pork roast for Noche Buena (Christmas Eve). This is the first time I'm doing a whole fresh ham (17.4 pounds). It will be marinaded overnight in mojo. My question: How long will it take to get the pork to around 190 degrees with the oven set at 275 degrees? Basically, I'm slowly cooking it until it reaches that bbq pork consistency. Since it's such a large piece of meat, I want to know roughly how long it will take so I can have dinner at a reasonable time. My initial guess is about an hour a pound, which means I'm putting it in the oven very early Saturday morning.
