How long chicken be kept in refrigerator?

Everything I've ever read or been taught was that chicken should be cooked within 2 or 3 days of purchase. Yet, many supermarkets, including Whole Foods and Trader Joe's, have much more lengthy expiration dates on their packages. Are some chickens processed to last longer before freezing or cooking? The chickens that have these late dates are said to be "minimally processed", so how can they be refrigerated for so long?
