London: are these premium restaurants worth it?

I'm currently mulling over the universe of London dining and have broken it down into categories as follows:

1. Most expensive - gourmet menu over 75 GBP
2. Very expensive - gourmet menu 65-75 GBP
3. Expensive - gourmet menu 50-65 GBP
4. Moderate - gourmet menu/food for one 40-50 GBP
5. Everything less expensive

In the first category, my choice would be Gordon Ramsay; however, I'm not sure that I want to go that high in terms of price.

In the second category, my shortlist consists of The Square and Aubergine. Two questions here: (i) which of these is better and (ii) for an incremental premium, should I go with Gordon Ramsay instead?

In the third category, my shortlist consists of The Capital, Pied a Terre and Orrery. Any preferences?

In the fourth category, I am looking at (i) Zafferano or Locanda Locatelli, (ii) J. Sheekey, (iii) Club Gascon, (iv) Chez Bruce or The Glasshouse or La Trompette and (v) Rules. Any preferences? And, more importantly, are these choices generally better values than my choices in the third category?

In the fifth category, my shortlist consists of North Sea Fish, Andrew Edmunds and Yming. Any preferences?
