ChrisVR started a long discussion on the General Topics board about how to get the yuck out of tofu. Several posters emphasized the importance of freshly made (not just freshly purchased) tofu. I'm a recent convert to tofu--in the sense that now I actually look forward to it, instead of thinking well it's okay if you season the bejesus out of it--and what converted me was various silken tofu dishes eaten in restaurants around town. It did not have the musty taste I always associated with tofu. Now I buy tofu from Chang Shing Tofu, which is made in Cambridge, and have had very good luck with it so far. I've found it at Reliable Market in Union Sq. and various small Chinese & Korean markets. Hounds, do you have favorite brands/shops for tofu? If there's something even better I'd love to hear about it.
