Looking for Twin Cities food scene (or not) people who are thinking creatively about what's going on in the world of plant-based food. Not necessarily vegan or even vegetarian, but into thinking differently about food from a veggie-centric perspective.

I've thought of the people behind the Herbivorous Butcher, of course, but I'm interested in getting other perspectives. They don't have to be chefs, also.
