I wanted to make lobster risotto for my BF for VD but last night he told me that Shrimp Scampi is what he would prefer. Every market has lobster tails on sale & I want to take advantage of that so I thought I could use lobster for some kind of appetizer. But what? The scampi is fairly heavy so I don't want to make bisque and I don't want to be standing at the stove frying lobster egg rolls. I would prefer something that I can make ahead so I can be tending to (ahem) other things. The google is not much help but I know that you folks will be!!
