i recently moved in with a new set of roommates, which on one hand is terrific (they're great girls, and cooking for 4 is easier than cooking for 1), but on the other hand is a challenge - now i've got to start cooking (more or less) vegetarian meals.
i've never been a huge fan of meat-substitute products (tofu, seitan, tvp, etc.), and i don't want to just make pasta, rice, or egg dishes all the time. does anyone have experience with delicious, healthy, easy(ish) to make vegetarian dishes?
nb: we've got an allergy to eggplant, and a strong dislike for bell peppers.
