Liven up my cheese straws please!

Every year, I make cheese straws to give out to friends & co-workers for the holidays. A little savory to compliment the all the sweet treats. My friends really enjoy them, but I'd like to liven them up a bit. The main recipe calls for sharp cheddar and Tabasco sauce. Here are the cheeses I've bought:

sharp and extra sharp cheddar
gouda
chipotle gouda
Frank's Red Hot sauce

Any other good cheese/spice suggestions and/or combinations? Can I combine sharp cheddar and gouda or should I make separate batches of cheddar straws and gouda straws?
