Live poultry market tips?

Anyone have any general tips on shopping at a live poultry market? The one near me in Queens carries old chickens, spring chickens, guinea hens and rabbits. I must admit that I'm a little freaked out by the whole thing (being a former vegetarian), but I'm excited to try it if it means a better product (plus the feeling of integrity I allow myself for looking my dinner in the eye before I eat it). Any hygiene issues I should be aware of? Is there a big diference in flavor from various supermarket (organic and non-) varieties? I'd just like to be as well-informed as possible before I shop there. Thanks.
