A truly amazing Tomato Soup at Fuze in downtown Banff started us off for a wonderful, eclectic, ethnic culinary tour. The cream based soup had just the right amount of sweetness accented with smoked bacon and a spoonful of pesto cream but I could not place the one ingredient. I found out later it was Liquid Smoke...I would have never guessed.
It was a quiet night at the restaurant at what must be the off season in this spectacular local. Only a few tables so we received lots of attention. Great help on the wine menu which was quite extensive.
So many interesting choices that we wanted to try so we just split many different menu items. The origins for each seemed to come from all over the world, Roasted Tomato Soup, Seared Calamari in Pesto on Rissotto. Thai Spiced Prawn Salad on Pappadum (sp?) and we finished with a NY steak with Indian spices. All were kind of on the rich side but flavorful and we savored every bite. My only regret was that they would have served each item individually rather than all the apps at once but it was our fault for not making that clear to the server.
The Happy Birthday chocolate sweetened the deal for a great evening.
(They also offer a fun, well organized cooking class which I attended days later and found out the secret ingredient of the soup)
Another night on our trip we tried the Maple Leaf Grill. Also a great find.
It was a Sat. night and the place was busy with great energy. Here, we both wanted the same item and were thrilled with our choice of the Apple-Crusted Pork Tenderloin. Watch out though........the chocolate soufle is really served at 400 degrees......my burnt tongue wished I had listened to the warning. Service was excellent too and she really knew her wines.
Banff may be a National Park but with restaurants like these, we sure weren't "roughing it."
